As much as I look forward to decorating my cakes and bringing them to life artistically, I also take pride in ensuring the inside delivers on flavour.
Over the last few years I’ve really indulged myself in learning from the best cake recipes and giving them my own twists.
I love deep, intense flavours that are rich without being heavy, and sweet without being sickly. I source the highest quality ingredients I can locally, using seasonal fruits, Belgian chocolate and real vanilla bean paste to create the best flavour profiles.
All wedding cakes are covered in a layer of white chocolate ganache to maintain moisture and freshness.
This also gives your cake support and structure before applying a thin layer of sugarpaste. Most commonly I use a silky buttery swiss meringue buttercream (which was a revelation when I first discovered it!) but can also swap out for a more traditional American buttercream.
There are a mixture of crowd pleasers as well as some more contemporary, unusual flavours. I’m confident that there will be a combination here to suit every palette, but if you would like a flavour that isn’t listed below, just let me know and I’ll cook up something special just for you.
